At the beginning of November, our Executive Chef Team, Sandra Moyers and Alyssa Craig, embarked on an exciting culinary journey to Los Angeles, where they had the unique opportunity to participate in the International Catering Association's Vegan Immersion Workshop. This immersive experience not only broadened their culinary horizons but also equipped them with the skills to elevate the vegan dining experience at our Magic Moments Venues.
This workshop, led by Chef Renee Loux and enriched by the contributions of Good Gracious Events- both leaders in vegan and sustainable cuisine, has unleashed a culinary revolution at A Divine Event. The fusion of expertise and passion for plant-based living has elevated our commitment to providing exceptional vegan options at our catered events. As we integrate the knowledge gained from this workshop into our menus, guests can anticipate a diverse and delectable array of vegan offerings that reflect the pinnacle of culinary excellence.

Day 1: Building Foundations and Cultivating Cheeses
The workshop kicked off with a focus on building the foundational elements of vegan cuisine. Our chefs delved into the art of crafting different nut milks, which were then skillfully prepped to culture and transform into a delightful array of vegan cheeses in just a few days. The day was complemented by the start of pickling raw crudites and enjoying homemade chai mocha lattes made from scratch using cashew or almond milks.
Day 2: Plant-Based Culinary Creativity
Day 2 was a deep dive into the world of plant-based alternatives for some of our favorite dishes. Our chefs explored innovative techniques using celery root and beet to create mouthwatering raviolis. The workshop also introduced the art of making coconut bacon, a crispy and flavorful bacon substitute, along with a lesson in crafting tacos using jackfruit Birria and mushroom carnitas. The day was a celebration of culinary creativity, showcasing that plant-based options can be both indulgent and satisfying.
Day 3: Culmination of Culinary Artistry
The final day of the workshop saw everything come together in a grand culmination of culinary artistry. A sumptuous spread featured everything our chefs had diligently worked on throughout the week. The highlight was a vegan charcuterie table that boasted a variety of dips, cheeses, pickled veggies, and gluten-free breads. Vegan tarts and desserts added the perfect finishing touch to this feast of plant-based delights.
